Different Approaches to Dairy featured a dairy demonstration and a 'make it yourself' opportunity for eating your own butter and cheese at the Exchange lunch. The exchange looked at how farmers can best utilise dairy products - not just by milking cows. We focussed on a more-traditional, back-to-basics look at dairy farming, featuring expert Mimi Crawford’s dairy farm, and how they have added value to their limited milk pool with raw milk and butter and other products. 

New, emergent hero crops for fodder and soil health - as exemplified in Model Plot by Deirdre O’Mahony - was also a focus of this exchange.
